One of the girls I work with gave me this great recipe for a really easy, delicious, and healthy summery dip! Perfect alternative for a heavy ranch-based dip, cheesy dip, or even guacamole.

ingredients

corn

black beans

black-eyed peas

celery

peppers

jalepeno

onion

white wine vinegar

olive oil

sugar

limes

start with the sauce. mix 1/2 cup white wine vinegar, 1/2 cup sugar, and 1/3 cup olive oil.

boil until the sugar dissolves. put mixture into the fridge.

in a large bowl, mix the peas, beans, and corn together. I usually use 1 can of peas, 1 big can of beans, and 2 cans of corn.

stir together. make sure you drain the water out of the cans before adding all the ingredients together.

chop up the vegetables into little pieces. you’ll want your guests to get a full chip of all the ingredients, so the pieces have to be small!

mix the vegetables into the corn/bean/peas bowl.

cut up the limes and squeeze the fresh lime juice into the mixture for a great added flavor.

as soon as the sauce is completely cooled, pour about 1/2 cups or 3/4 cups into the bowl, depending how much dip you made/how much sauce you prefer.
